- Preparation
- Brew 3-5cc of tea in 1 litre of water at 95°. Leave to cool. Add ice cubes, milk, sugar or condensed milk (optional). Steep for 1 hour in water at room temperature. Theine not very soluble in water at room temperature, cold infusion reduces theine concentration.

Dreams of Thailand, as if you were there
In Thailand, cha yen means iced tea. This refreshing drink is part of street food and is often served in a cup or directly from a small plastic bag with a straw. The authentic recipe? A mixture of Thai black tea, crushed ice, evaporated milk, canned condensed milk and lots and lots of sugar. The Thais use a Thai black tea sold in a red and white bag (Hand brand) with flavourings and a colouring agent to give it its traditional dark orange colour. To replace this commercial blend, our cha yen is made with black tea and spices. Star anise, vanilla, cinnamon and cardamom add natural flavour and sweetness. Purists will tell you, though, that without sweetened condensed milk, this really isn't Thai cold tea! Sabai, sabai, our Yaksha Thai cold tea? This orange tea reminds us of our travels in South-East Asia and is similar to the famous Indian masala chai. This comforting drink takes us back to moments of happiness, serenity and sweet memories spent in Asia.
