¡Qué padre! The Yaksha guacamole mix?
What do you imagine when you think of Mexico? Sunshine, dreamy beaches, lush green jungles, colourful colonial towns, the remains of ancient civilisations and spicy, complex cuisine. Tortillas come in an infinite variety of flavours. A staple of Mexican cuisine, chillies come in a multitude of varieties and add a delicious spice to sauces. Corn and beans are other staples, and guacamole is a popular aperitif. This typically Mexican sauce dates back to the Aztecs, but continues to accompany totopos, the famous corn-based tortilla chips. Originally, guacamole was simply mashed avocado, but the recipe has evolved to include tomatoes, lime juice, onions and spices. Qué padre! The Yaksha guacamole mix? Origin
Sourced from single farms
This guacamole blend is made up of spices from three producers, each with their own small-scale farms. The kashmiri pepper is grown by Showkat, which is part of a group of natural agriculture producers. With notes of tomato and pepper, this chilli comes from remote valleys near Pampore. Coriander and cumin are grown by Dinesh in Gujarat in northern India. The semi-arid soils of Gujarat are ideal for growing these spices. Finally, white pepper is grown in a forest garden not far from Kandy in Sri Lanka. Dhammi uses permaculture to interact in harmony with the other plants and spices. The wild pepper plants give it a pronounced flavour specific to this region.
About the farmers
During farm visits, agriculture is an essential element, as it has an impact on the environment. We know today that biodiversity and nature are in a bad way. Yet if gentler methods were used, we would all be eating sustainably, ecologically and climate-friendly food. Our producers respect their land by growing a wide variety of spices, plants, herbs and fruit trees. There is no single plant, but an entire ecosystem that maintains a balance between all living species. By preserving the fertility of their soil and using the manure from their cows as natural fertiliser, they also become more profitable in the long term. Our own network of producers is a win-win situation.
