Also known as red gold or pimentón, Spain is one of the world's leading paprika-producing countries. Two regions have PDO status: pimentón de Murcia and pimentón de la Vera. Both are of excellent quality, but the main difference is the way they are dried. While pimentón de la Vera is dried over a holm oak fire, pimentón de Murcia is sun-dried or dried in a mill. Paprika is produced in Murcia by grinding red peppers of the bola variety, which resemble large cherry tomatoes. This variety, combined with the subtropical Mediterranean climate and saline soils, gives paprika its characteristic sweet aroma, pronounced fruity flavour and high colouring power.
