Black mustard
While white mustard probably originated in the Mediterranean basin, black mustard is grown all over India. Slightly more pungent and bitter than white mustard, black mustard can be used in many curry-based recipes, but its use remains similar. In South India, they add an original touch with their roasted, nutty flavor. Mustard is an annual plant in the cabbage and radish family. The yellow flowers turn into fruits in the form of pods containing around 6 seeds. These seeds, rich in vitamins A and C, fiber and minerals, are used as spices. Historically, white mustard was introduced to India and China via Arab trade routes, while black mustard reached Europe from India. A rich exchange of flavours along the spice route!
